STEPS
How to do it

Open the album
In Photos, go to Collections → Albums, then open the album you want to change.

Add items
Tap More in the album, tap Add Photos, choose the photos or videos, then tap Done.

Remove an item
Touch and hold the photo, then tap Remove from Album.
When you are done
Done.
