How to do it

Open the album
In Photos, open Collections → Albums, then open the album you want to change.

Open album editing
Tap More, then tap the current title.

Choose a new key photo
Tap the photo icon on the current key photo, then choose a new photo from the grid.

Save the change
Tap Done to save the change.
When you are done
Done.
